Strawberry Streusel Coffee Cake
This Strawberry Streusel Coffee Cake is a gooey sweet breakfast cake filled with fresh strawberries and topped with a delicious cinnamon sugar streusel topping.
Coffee cake reminds me of after-church service on Sundays as a child. My father would often take us to a little area bread store on the way home. That store sold those rectangles of Entenmanns’ coffee cake. I remember the waft of sweet air that hit you when we entered. I can almost smell it now.
Arriving home, that small square of cake would always be served with a glass of milk. It was the highlight of a Sunday morning for us kids. All these years later, it is only now that I can appreciate fully just how special these little tiny traditions that happen in each of our families are. How those seemingly insignificant details are what stick with us. Those moments we get to look back to and smile at many times over.
As an adult, I have gotten away from store-bought packaged cakes. But the nostalgia is still present when I make this Strawberry Streusel Coffee Cake. Cutting into it on a Sunday morning, after church. That part is still very much alive. An after-church treat. And why not?
Baking season is just ahead of us and it just so happens that fresh strawberries are still abundant. Making this Strawberry Streusel Coffee Cake is the perfect way to start the baking season off. The fresh fruit blended into this batter creates a gooeyness to the cake that I quite enjoy. Tasting the streusel with those fresh berries and a fresh cup of coffee alongside. What can be better?

Why I Love This Recipe
Aside from the nostalgia of this Strawberry Streusel Coffee Cake. It is made up of whole ingredients and a pretty simple cake to put together. Anytime I can bake a cake with my trusty cast iron is also a major plus for me. Going from oven to table. It gives a lovely rustic presentation sitting in the skillet with the gooey strawberries peeking out behind the streusel.
What You’ll Need To Make It
1 tbsp baking powder
3 1/4 cups sifted all-purpose flour
1 tbsp vanilla
1 ½ cups sliced strawberries
3 large eggs
1 cup granulated sugar
1/2 tsp sea salt
1 cup coconut oil
1/2 cup plain yogurt or sour cream
For The Strawberries:
1 tsp cinnamon
1 tbsp melted butter
2 tsp flour
For the Streusel Topping:
1/2 cup packed brown sugar
8 tbsp melted butter
1 tbsp cinnamon
1 cup of all purpose flour
Directions
In a large bowl sift flour and baking powder together. Add the salt, set aside.
Slice strawberries into bite-sized pieces. Sprinkle over the flour, cinnamon, and sugar. Pour over the 1 tbsp of melted butter. Mix and set aside.
For the streusel topping melt the 8 tbsp of butter and pour over the flour, brown sugar, and cinnamon. Mix until combined. The mix will be clumpy.
In another medium bowl, crack the eggs, add the yogurt, milk, coconut oil in liquid form, sugar, and vanilla. Mix well.
Slowly pour the mixture into the large bowl and combine.
If using a skillet to bake please note below. If using a 9 x 13 baking dish, make sure to either spray a nonstick baking spray inside or butter the dish to prevent sticking. Pour half the mixture inside.
Then evenly spread over the strawberry mixture and top with the rest of the cake batter.
Finally, top the cake with the streusel mixture.
Bake for approximately 45 minutes or until you can pull a clean toothpick out of the center.
Baking Notes
If baking in a skillet I recommend heating the skillet a bit first on the stovetop or by popping it into the oven briefly while the oven preheats with about 1 tbsp or so of butter making sure to butter the sides of the skillet as well. Once heated, then add the batter in the same stacking method as explained in the original steps above.

Can I use butter in place of the coconut oil?
Yes, the butter will work for this recipe and so would olive oil. If using butter, be sure to use real butter.
What type of pan is recommended?
I like using my 12 inch cast iron skillet for this recipe. But a glass 9 x 13 baking dish works great too.
Can I use frozen strawberries for this recipe?
Yes, you certainly can. When using frozen fruit when baking. Allow the fruit to defrost before being used so that you can get out the excess ice and prevent the batter from being too runny.
What type of flour can I use?
For this recipe, I have used unbleached organic all-purpose flour. Cake flour will also work for this recipe.

- Place a side of butter on the table when serving.
