Meatloaf. Not an especially tasty-sounding food by name or reputation it seems. Although there are many variations of this dish, I have not-so-good memories. Mostly of a soggy vegetable-packed sponge that would be smothered in ketchup and baked
. I realize this not-so-flattering image is not very appetizing. But it is how my 8-year-old self saw this creation called “meatloaf“. Mind you I was a picky eater so this doesn’t speak any truth about my mom’s cooking.
Needless to say, when the word “meatloaf” was mentioned in our house growing up, it usually wasn’t met with much enthusiasm. Certainly not from me anyway.
In deciding to make my own variation of a meatloaf I needed to change a few things in order for me to want to make my own.
For this recipe I have kept it simple and opted to omit the veggies altogether, leaving them as the side dish they were meant to be.
The addition of the glaze tops off this meatloaf and creates a deliciously rich sauce that compliments the meat perfectly. Gone is the plain ketchup or thick tomato paste.
This is my go-to meatloaf recipe and my daughter loves when I make it. It also makes great meatloaf sandwiches if there is any leftover.
Glazed Meatloaf is a great one to pair with this meatloaf is my Roasted Asparagus or my Creamed Spinach with Garlic.
What I Love About This Recipe
I believe we all need those go-to meal items when being the main person of a household that does the meal planning. Night after night we are all faced with the dreaded, what is for dinner dilemma. And if you have children like mine, you will also be asked this question right as the clock strikes the pre-dinner time frame on a daily basis.
So we need to get our answers ready. It feels so good answering that question with confidence. It makes us feel prepared, ready, and at ease in its own way. Because there is no stressing when you have a plan. This recipe allows me to have that answer on the ready. Whether or not I actually pulled the meat out of the freezer really doesn’t matter. Defrosting ground beef is nothing more than a bowl of lukewarm water away from avoiding a dinner disaster altogether.
I love that this is a simple recipe to put together that results in a delicious flavorful meat dish that goes with just about everything. I love being able to mix it and toss it into the oven without much effort on my part. The meat is juicy, flavorful, and one that everyone seems to love. It is great for leftovers as well as it reheats nicely. Making it great for sandwiches or having it just the way it is.
This Homemade Glazed Meatloaf Recipe is a total keeper and I know it is one that you likely go back to as often as I do.
What You Will Need To Make It
2 lbs ground beef
1 cup of bread crumbs
1 tsp sea salt
2 eggs
1 tsp cracked black pepper
1/4 cup of the glaze sauce (recipe below)
Glaze Sauce
1 cup of organic ketchup
1/4 cup packed brown sugar
2 cloves of garlic or 1 tbsp
1/2 tsp garlic salt
Directions
Begin by making the glaze. Take a sauce pan and add the glaze recipe above to the pot.
Let it simmer on the stovetop for about 5-7 minutes making sure to stir from time to time. When ready (the glaze will be a little deeper color when ready) remove from the heat and set aside.
In a large bowl combine the ground beef, eggs, bread crumbs, salt, and pepper. Add in a 1/4 cup of the glaze sauce.
Mix the meatloaf (preferably with your hands) and combine all ingredients well.
Using either a 10-inch cast iron pan or a loaf pan, place it inside and shape it to where the meat is spread evenly in the pan. You will want to shape it to where there is room alongside the edges to allow the oil in the meat to run off. This will help to brown the outer edges.
Bake at 375℉ for about 30 minutes.
Then remove from the oven and spread the rest of the glaze on top evenly.
Bake for an additional 10-15 minutes or until the internal temperature is 160℉.
Cooking Notes
- I like using a cast-iron skillet to bake my Homemade Glazed Meatloaf Recipe in. But you can use any baking dish you have on hand.
- Be sure to make the edges lower than the center so the fat can drain off while cooking.
- I use grass-fed organic 90/10 ground beef for this recipe.
- You can decide to use minced jarred garlic or fresh for this recipe.
Serving Suggestions
- This Homemade Glazed Meatloaf Recipe goes well with mashed potatoes, rice or macaroni salad.
