I find that most things I make or come up with are a creation made up from things I have on hand rather than making special  trips to the store for specific ingredients. This is especially evident during a pandemic. I don’t mind this sort of thing personally as I find that cooking this way forces the creative part of my mind to flow and for me to come up with new meals to enjoy and more importantly to share.

Looking back on these blog posts I am seeing lots of uses for pastas, dried beans and baked goods. Certainly a telling sign of limited supplies or the many purchases of things that have long shelf lives. I am trying to limit the amount of things needed for recipes during this time and try using ingredients that many people keep on hand.

I hope this recipe finds you well and that you are able to recreate this dish in your home without having to make any special trips.
