Today I am sharing 4 of my Quick Meal Ideas For Dinner. This is for those days you forgot to plan or have limited time to cook. These meals are my go to and favorites to make when I just don’t have a clue what to make.

We have all been there. It’s 3 pm and you realize you forgot to take the meat from the freezer. What to make, you rack your brain for ideas and nothing comes to you. I have certainly been there on many occasions and heck sometimes you just don’t feel like cooking.
I love to cook but even for me, there are moments when the day gets away from me. Suddenly the dinner hour strikes and the idea of making dinner becomes a burden because the day was long and I have no plan. These meals are not only quick but also delicious. You will find they are so simple but so good they may just become part of your meal planning.
Quick Meal Idea #1
This simple but delicious toast is filling and versatile. For me, I keep it simple by toasting some sourdough toast. Slicing an avocado in half. You’ll need half an avocado per sourdough slice. I smash the avocado into the bread a bit so that it doesn’t fall off when eating it.
Sprinkle salt, black pepper, and any fresh herbs I may have on hand. Today I am using some chives. Then finish it off with a drizzle of olive oil. Slice and serve. Now this can also be served with a side of fruit or a side salad. But honestly, it is satisfying on its own.
Quick Meal Idea #2
Skillet Strata is a great one-pan meal that comes together quickly. You can use any variation of veggies you have on hand and it is a great way to use any leftover bread you have. If you don’t have any leftover loaves of bread laying around you can certainly cube up any regular slice of bread you have. Use as many veggies and bread as you will need for the number of people being served.
You’ll begin by chopping up the veggies, and bread into cubes. Heat a skillet, add a bit of olive oil, and then the cubed bread. Allow the bread to crisp up a bit before adding in the veggies. While those cook beat together several eggs in a bowl. When the veggies are cooked thoroughly and the bread is crispy add in the eggs. Salt and pepper as you like. Serve with a side of salsa or sliced the avocado if desired.
Quick Meal Idea #3
Grilled Bread and Hummus
This meal is a favorite whether or not I am in a pinch. If you have store-bought hummus, it will make it even easier to whip up. If you don’t add a can or two of canned garbanzo beans to the food processor. Add 3 cloves of garlic, salt, pepper, and any fresh herbs you may have on hand.
Place the lid on the food processor and begin pouring in olive oil through the pouring spout. Stop when you see the hummus has started to come together. Serve with sliced grilled bread and fruit or sliced tomatoes.
Simple Hummus Recipe
1 can garbanzo beans
1/4 cup olive oil
3 cloves garlic
2 tbsp fresh herbs (optional)
salt and pepper to taste
Quick Meal Idea #4
Dinner salads are a great option when wanting to make a quick meal. You can put any toppings on these you have on hand which makes them a great option. Taco salads with ground beef, chicken salads with leftover shredded chicken, or my favorite, a salmon salad. I keep salmon filets on hand and they defrost quickly in a bowl of cold water.
Grilled up in a pan with coconut oil, salt, and pepper. Then laid across a bed of mixed greens, feta cheese, dried cranberries, and chopped pecans. Dress in olive oil, salt, and pepper. There you have a simple delicious meal that takes minimal effort to put on the table.
