This No Knead Artisan Bread recipe was one of the very first no-fail bread style recipes I tried when I began baking bread. I have since developed my variation that I am sharing with you. It uses the basic idea of using a quick active starter yeast in place of a sourdough starter. This way, you can skip the all-important aspect of kneading dough and have a delicious loaf of homemade bread on your table with little effort.
If you are new to bread baking it can be overwhelming to see all the techniques available out there. This is a great one to start with that will allow you to make good bread right out the gate. You can also find my recipe for a Sourdough Loaf which is a perfect one to try using a sourdough starter.
Why I Love This Bread
For as long as I have been baking bread I still come back to this original recipe. A recipe that got me over the reluctance of baking bread. For a long time, I had this idea that only the most skilled at baking were the ones that would be able to bake fresh delicious bread at home. I have since realized of course that this is not the case.
You can certainly bake great bread without much baking experience. This is especially so for this No-Knead Artisan Bread recipe. It takes the guesswork out of it. It also allows you to bake bread on the same day. No kneading, rising, and waiting. And certainly no use of a fed sourdough starter. So for me. Whether you are a beginner bread baker or an expert. Recipes like this one are incredibly useful to have.
What You’ll Need To Make It
3/4 tsp instant yeast
3 cups all-purpose flour
1 ½ tsp salt
1 ½ cups room temp water
Parchment paper
(A dutch oven or a pot with a lid that can handle a high temp)
Directions
In a bowl, combine all the ingredients either mixing with your hand or a large spoon. Once the dough forms it will appear somewhat stringy and that’s ok. Leave inside the bowl and top with a damped kitchen towel and place in a warm spot in your kitchen.
Let it sit overnight or for a minimum of 8 hours.
When the dough is ready. Turn your oven to 450℉ and place the Dutch oven inside for about 30 minutes with the lid on. You are creating an oven inside an oven with this step which will give the loaf that bakery quality.
Please Note: Make sure you use oven mitts or proper oven cloths as this will be very hot when removed.
While your Dutch oven is heating, sprinkle a surface with a little flour and shape the dough into a circular-style loaf. Remember this is going into a Dutch oven so it will be a round loaf.
Place the loaf onto a piece of parchment paper and top with the kitchen towel allowing it to do its final rise. Once the Dutch oven has been heated remove it from the oven. Grabbing the sides of the parchment paper lift the loaf and place both the parchment paper and loaf directly inside the Dutch oven. (This will help when removing the loaf.)
Place the lid back on top and place it inside the oven to bake for 30 minutes.
After 30 minutes, open the oven and remove the lid. Bake for an additional 15 minutes with the lid off. Let the loaf cool before slicing.
Baking Notes
- For this recipe, I use unbleached all-purpose flour.
- This recipe does not need to be hand kneaded however you will need to shape the dough after it has properly risen on a floured surface.
- Allow the dough to rise after mixing for at least 8 hours.
