Garlic Mac & Cheese Recipe

This Garlic Mac and Cheese Recipe is a creamy, mac and cheese with a bit of garlic to spruce it up. It’s perfect for a tasty quick lunch.

In our house I am not one to purchase boxed food items. When shopping I try my best to shop the perimeter of the stores where the real ingredients can be found. Though sometimes I have to admit on a hurried day I could really use something quick. Cooking this way has very much taught me quite a bit about cooking and given me the ability to make something out of nothing. This quick recipe for a garlic mac and cheese is one of those recipes I make.

What You’ll Need To Make This Garlic Mac and Cheese Recipe

1 lb (454g) package Tofette pasta

1 ½ cups (370g) of milk

3 tbsp (43g) butter

3 tbsp (23g) flour

2 cups (490g) mozzarella or jack cheese

3 tbsp (49g) minced garlic

Salt and pepper to taste

Directions:

In a pot cook pasta as directed on the package.Remember to salt the pasta water.drain and set aside in the pot.  In a separate saucepan add the butter and garlic. Once the butter melts add the flour and with a whisk mix it into the butter and garlic. Pour in ½ cup (120g) of the milk and whisk it to combine. Add another ½ cup (120g) of milk and 1 cup (250g) of the shredded cheese. Add 1 tsp (6g) salt and some cracked pepper and the last last ½ cup (120g) of milk.

Pour the sauce on to the drained pasta and add ½ cup (125g) of the shredded cheese. Stir until completely melted and combined. Pour the pasta into a casserole dish topping with the remaining cheese. Pop it under the broiler just to melt the top cheese.

Be careful not to leave too long or it will dry the noodles out. You can skip this last step by just combining all the cheese in with the sauce at the same time. Either way works just fine.
